In this heat who wants to cook --- so try a no cook sauce.
This sauce can be used in a variety of ways. You might try it as a bruschetta*topping, serve over grilled chicken or fish or just simply toss it with pasta. Tastes better if you make it early in the day and let it set for an hour or two. The flavors have time to blend if it sets. This recipe will make 3 ½ cups.
1 pound chopped tomatoes
½ cup chopped onion
½ cup olives
¼ cup chopped marjoram leaves
½ cup chopped parsley sprigs
2 tbls balsamic vinegar
½ tsp black pepper
¼ cup extra virgin olive oil
Combine all ingredients in a mixing bowl and allow to set for up to 2 hours. You may add salt to taste.
*Bruschetta
Slice a loaf of French bread diagonally into ½ inch slices and discard the ends. Brush with olive oil and bake at 375 for 5 - 6 minutes or until lightly browned.
